LCHF - Chicken "Taco Bell" Tacos
Yield 4 Taco Shells
I am sooooooooooooooo excited about these Tacos.
They are crispy, tasty, seasoned, easy, and OMG!!!!! so freaking tasty!
I had an idea, and I executed it amazing in the first go!
Have to say I am so surprised as I thought it would take a few goes.
To say I won't miss my "real" Mexican food over the rest of my life. would be a lie! I love Mexican and everyone who knows me knows my soul is "megsican" so I have to get inventive...
Without swearing, or much ado, if I can twist your arm, or make you make anything on this website, for goodness sake just make this... its good...real bloody, amazingly, tasty good!
Bring it on!
200 gm Pork Rinds
55 gm your fave cheese
500 gm Chicken Breast
1/4 tsp cumin
1/4 tsp coriander
1/4 tsp onion powder
1/2 tsp garlic powder
1/2 ts mexican oregano
1 whole grated Chipotle, or 1 tsp chipotle pwder
Duck Oil, or Lard Enough for Deep Frying
Place Pork rinds into Thermo Bowl
Blend 5 seconds / Speed 6
Empty into Large bowl
Place cheese into Thermo bowl
Grate 5 seconds / speed 7
Ad chicken and egg to Thermo bowl
Blend 30 seconds / speed 9
Empty Chicken mix into separate bowl
Put all your Egg Wash Ingredients together and have in yet another bowl, lol
Take your chicken mixture and divide into "handful size" balls, mine was 4 out of this mixture
Place into a ball
Place between a split Sealing Sandwich Bag, and only half press in a Tortilla Press. * Don't have a Tortilla Press...dont worry roll into a bowl, between your split sandwich bag gently press with a plate. I really mean gently. You want the disc to be thinker than most plates but not too thick
Now baste it in your egg wash on one side, gently flip and baste on other side.
Now, sprinkle with pork rinds, press in firm, and flip and repeat other side.
Remove disc and place on a sheet of baking paper, place a small object to wedge between the disc and and fold in half, "taco shape" and place in freezer for 10 minutes. I used my ice block moulds, but anything that can stop the two sides form touching without making your shell too wide is great.
Heat your oil to boiling and place your half moons in separately. To easily shape just use a a knife to push the breast slightly into shape and you will end up with the same result as me. It isn't scary or hard. In fact this is extremely easy to end up with and amazing Taco shape as well as look!
I have simply filled these suckers with a basic Pico de Gallo, and Guacamole. With the addition of a bit of lettuce and sour cream. YOU! YOU! can fill them with whatever you want!
It could be a chile con carne for goodness sake.....these suckers are seriously tasty as//// I want to swear but I won't%^$. But these are really impressive to serve, and even better to taste.

I did use taco Tongs from Chilemojo.com.au toffy the shells, but you know what?? I did shape them in the freezer as instructed, and used a knife to push the chicken down to shapes the shells as I wanted. This worked easily so please don't be shy, this is super easy to shape
